Beef Restorative Broth
This is a recipe for the soul. It’s simple flavor brought forth from good quality ingredients that play together well to give you that “oh, heavens, this is what I’ve been missing” feeling. We’ll coax all the beefiness from bones and beef shins and we’ll layer it with vegetables and noodles for a broth to cure whatever ails you.
Beef Soup
Ingredients
- 3 beef soup bones with marrow
- 2 beef shins (you can use beef shanks as well)
- 1 thick slice of celery root, peeled
- 2 large carrots (mine were gargantuan)
- 1 yellow onion
- 1 parsnip
- 4 celery stalks
- 1 package egg noodles (or any noodle you prefer)
- salt & pepper (I also use whole peppercorns in this)
Directions
- Place the bones with the beef shins in the Instant Pot along with a tablespoon of peppercorns and some salt. Add water until the maximum allowed level (follow the marking on the inner pot). Set to high pressure for 45 min. Natural release for 15 min.
- Strain the broth in a large soup pot. I like to strain my broth through a cheesecloth; it removes all the floating bits leaving it clearer. Take the beef shins and slice the meat in large chunks; keep covered and warm.
- In the broth that’s now in the soup pot over medium heat, add all the vegetables and simmer, covered, for another 45 min.
- Remove all vegetables except the carrots from the soup; discard. Add the beef shins back in the soup. Taste for seasoning and adjust, if needed.
- In a separate pot, boil the noodles according to the instructions on the package. Strain and rinse (you don’t want the extra starch to cloud the soup).
- When ready to serve, ladle in a bowl, add the noodles and tuck in!
